NEW Gluten-Free Cafe Cookie from Byron Bay Cookies
With the continued growth of the 'free from' market and recent changes to the law regarding what can legally be defined as gluten-free, many cafes and coffee shops which have been baking gluten-free products onsite will no longer be able to claim the product is gluten-free unless their products are shown to meet the required gluten content.
Byron Bay Cookie Company, which has over 20 years experience baking gluten-free cookies, is introducing a gluten-free variety to their cafe cookies range (which is sold from glass display jars). The new Byron Bay Gluten-Free Domino Cookie is filled with chunks of premium European milk and white chocolate, in a light, buttery gluten and wheat free cookie. The cookie has been certified by Coeliac UK and carries the 'crossed-grain' symbol. It is also approved by the Vegetarian Society. The company already has a range of 5 gluten-free single wrapped cookies which are sold from display trays.
"With a recent change in the law as to what can be legally described as gluten-free, we have been asked to provide a gluten-free cookie which could be served from a jar," explained Paul Maxwell, European Marketing Manager, Byron Bay Cookie Company. "We had been looking to add a gluten-free cookie to our cafe cookie range for some time due to an increased demand from cafe owners, so we used our extensive baking experience to develop a great tasting caf? cookie which was gluten-free as well."
Caf? owners will need to pay special attention to the how the cookie is displayed, making sure that the jar is washed and dried between refills and that the jar is filled in a gluten-free area away from any possible cross-contamination. Separate, dedicated serving tongs will need to be used when serving the cookies.
The UK-baked Byron Bay Cookies use locally sourced ingredients, free range eggs and premium European chocolate. They are fully approved by the Vegetarian Society and the gluten free range is certified by Coeliac UK. The UK baked product has already won the Vegetarian Societies Award for 'Best Approved Snack Product 2009' for the Triple Choc Fudge Cookie and was nominated for the same category in 2010 for the DottyTM Cookie.
The new gluten-free Domino Cafe Cookie joins the classic traditional flavours such as White Chocolate & Macadamia Nut, Natural Honey & Oatmeal and the company?s own originals such as Triple Choc Fudge and DottyTM Cookies.
